  • 395g can sweetened condensed milk
  • 2x 200g package milk choc melts
  • 4-5 drops Peppermint Essence
  • 50g --- Shredded coconut

Recipe's preparation

    Method
  1. Place entire tin of Sweetened Condensed milk into Bowl

     

  2. Break up chocolate and place in bowl. 

  3. Cook for 10min/100deg/Speed 3

  4. Line a square cake tin with greaseproof paper making sure paper comes up sides of tin.

  5. add peppermint essence and coconut, 20sec/Reverse/Speed 1.

  6. Quickly transfer to lined cake tin, place extra shredded coconut if desired on top and leave on bench or stove top to cool down completly before transfering to fridge to set.

  7. Cut into desired pieces with a warmed dry knife and enjoy

    I made this for Christmas and was an absolute hit. Thank you for sharing, yummy! I have also used this as a base to make rocky road fudge (without the peppermint) and added mashmellows and lolly raspberries mixed in after the fudge was made before pouring it into a tin.

     Its beautiful but doesn't really taste like peppermint even tho I put more than five drops in.....brand may play a big difference in the amount of peppermint required.
