Chocolate Coconut Yogurt

Ingredients

  • 310 grams water, for best results use filtered, chlorine free water, as these chemicals kill the yogurt cultures and will inhibit their growth.
  • 1 teaspoon agar agar or 1.5 teaspoons grass fed gelatin, (Great Lakes Gelatin is good)
  • 30 grams sweetener, like rice malt, maple syrup. rapadura or panel
  • 30 grams Tapioca
  • 4 heaped tablespoons coconut yogurt, reserved from last batch or store bought batch, OR contents of 2 lactose free probiotic capsules OR 2 teaspoons yogurt starter culture from a health food shop.
  • 2 cans Ayam coconut cream, total of 600mL
  • 1 vanilla pod, split and seeded, OR 1 teaspoon vanilla paste/powder
  • 20 grams raw cacao powder

Recipe's preparation

  1. 1. Place water, agar agar/gelatin,tapioca and sweetener into bowl and dissolve 4mins/ 90C/speed 4

     

    2. Add in coconut cream and combine 2mins/90C/speed 4

     

    3. Allow mixture to cool in the bowl to 50C (about 1/2 an hour) 

     

    4. Once cool, add in reserved yogurt or yogurt culture or probiotic and blend 10secs/speed 6. Scrape down sides.

     

    5. Allow the yogurt to culture. Either leave yogurt in Thermomix 8hours/45C/speed soft OR pour into yogurt thermos and allow to culture for 8 hours as per manufacturers instructions.

     

    6. Once cultured,add yogurt back into bowl, reserving 4 heaped tablespoons for your next batch (keep in air tight container for up to 1 week). Add vanilla and cacao into bowl and mix 10secs/speed 3 until combined.

     

    7. Decant into airtight container and set in fridge until cold.

Tip

Omit Cacao for vanilla yogurt.

Vanilla and cacao must be added in after culturing as it may inhibit the growth of the culture.
