  • 1/2 cup Nut Butter - Your Choice, Macadamia, Almond, Cashews
  • 3 gelatine leaves, soaked 5-7 mins
  • 1 teaspoon vanilla extract

  • 50 grams Coconut Flakes or Shredded/Desiccated
  • 40 grams dark chocolate, coarsely chopped
  • 330 grams puffed brown rice

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    LCM Bars
  1. 1. Lightly grease a slice tray and line with baking paper. Set aside

     

    2. Soak 3 gelatine leaves in cold water for 5-7 minutes and squeeze out excess water

     

    3. Add Nut Butter, rice malt syrup, vanilla extract, gelatine and sea salt to bowl. Set timer to 5 min / 90 degrees Celsius / Speed 2

     

    4. Add coconut and chocolate to bowl 10 sec / Counter-clockwise operation / Speed Gentle stir setting / No heat to combine. The chocolate will melt through.

     

    5. Add 115 grams puffed brown rice to bowl 20 sec / Counter-clockwise operation / Speed Gentle stir setting / No heat to combine

     

    6. Set timer to 20 secs / Counter-clockwise operation / Speed Gentle stir setting / No Heat and pour remaining puffed brown rice through the lid, until all combined (roughly 30 to 40 seconds). Mixture will be sticky.

     

    7. Pour into lined slice tray and press down with the back of a metal spoon to even out the slice. Place a piece of baking paper over the top and flatten well with your hands or place another slice tin of similar size on top.

     

    8. Place in fridge until cooled and set completely @1 hour, then slice with a sharp knife into preferred size. I got 14 generous bars as per photo.

  3. I used a trio of nuts - 60g macadamias, 60g almonds and          60g cashews.

     

    Or, you can use the nuts of your choice totally the amount of 180g

     

    Method: Add nuts to TM bowl and set timer 1 min / Speed 9. Scrape down and repeat step. You may need to scrape down the sides of the bowl a few times.

     

    For a smoother consistency, you can stream in a small amount of oilve oil.

     

    Makes approximately 1/2 cup nut butter

Tip

Puffed brown rice is available from health food stores and most supermarkets in the health section.

Puffed brown rice has a lower GI benefit making it healthier.

You can use Rice Bubbles if you are unable to source puffed brown rice.

Whichever puffed rice you use, ensure that it is gluten free for those who cannot tolerate gluten.

Instead of Nut butter, you can substitute with Coconut oil

Instead of dark chocolate, you can substitute with 10 grams cacoa powder

Slice can be stored in an air tight container between layers of baking paper for up to one week in the fridge, or frozen for up to 6 months.

Suitable for TM31 machines too!

    I'm so confused how anyone made this recipe work. I had read comments about the amount of rice possibly being off so I only used 115g from step 5 and stopped there. Even that was hard to use and wouldn't combine.


    Eneed up throwing the mixture out which is a giant waste. And am gearing up to clean the sticky mess inside the thermomix.

  • I didn't seem to have enough

    I didn't seem to have enough of the mixture to cover 330g of puffed rice, so i only used 1 pkt (170g).

    They turned out OK.

  • I made the nut-free version

    I made the nut-free version substituting the nut butter with coconut oil, and puffed brown rice. My kids love it as a lunchbox treat. Made 14 bars, so froze some for lunch boxes. Kids said it tasted the same once defrosted. A quick grab n go healthier alternative snack.  Thank you.
