Chocolate and Prune Easter Eggs

  • 500 g dried fruit medley (apricot, pear, apple & peach)
  • 250 g dark chocolate, broken

Recipe's preparation

  1. Place dried fruit medley in bowl and chop pulsing the Turbo button 5 - 6 times.  Remove the mixture and form into small Easter eggs. If you lightly moisten one hand, the mixture is easier to work with.  I have heard that moistening your hands with 1/4 tspn of coconut oil also works well. I'll be trying figs next.

    Once coated in chocolate and set, you may like to melt a little white chocolate and flick it in one direction over the top using a fork, or sprinkle the eggs with milo, dessicated coconut, finely chopped almonds, pistachios or hazelnuts.

  2. Place chocolate pieces into mixing bowl and chop by pulsing the Turbo button 3 times.  Then melt 2.5min/50C/speed 1.

  3. Dip the shaped prunes into chocolate and place on a tray and set in the fridge.

Tip

Dried apples, apricots, peach and pear work well.  You may need to include a few moist prunes (or raisins) to achieve a suitable texture.  If using the Dried Fruit medley available in some supermarkets, soak the prunes in hot water beforehand and remove the seeds
