Coconut Lime sorbet (Dairy free)

  • 2 Tins Coconut Cream, (Use 270ml tins, frozen in ice cube trays)
  • 80 grams Maple Syrup.
  • 10 grams lime juice
  • 1 tsp lime zest
  • 1 tbsp Desiccated Coconut
  • 1 egg white

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Ensure coconut cream has been frozen in ice cube trays before starting.

    2. Place frozen coconut cream into thermo.  Blend for 10 seconds /speed 10.  Scrape down sides and bottom of bowl.

    3. Blend for a further 10 seconds/speed 10 or until all cubes blended (should resemble icy powder)

    4. Add maple syrup, lime juice, lime zest, coconut and egg white.  Blend 20 seconds/speed 10.  Scrape sides and bottom of bowl.

    5. Blend a further 20 seconds/speed 10 or until creamy.

    6. Serve immediately.

Tip

1. I have used 'light' version and full cream version of coconut cream - they both work.  I prefer to use Ayam brand of coconut cream as I find it creamier than other brands.


2. Adjust lime juice and zest to taste.


3. Can be made as coconut vanilla sorbet.  Exclude lime juice and zest and add one tbsp vanilla bean paste at step 4.


4. If not all eaten in one sitting, place in freezer. You will need to take out of the freezer about 5 - 10 minutes before serving to allow to soften.
