Coconut Rice Pudding

Ingredients

6 portion(s)

  • 1000 grams Coconut Cream and Water, (1 tin of Coconut Cream or 2 sachets of 50g Coconut Milk Powder, topped up with Water to 1000 grams)
  • 60 grams raw sugar
  • 180 grams arborio or medium grain rice
  • 1 teaspoon vanilla extract

Recipe's preparation

  1. Place all ingredients in TM Bowl.  Cook at 90 degrees, 50 minutes Counter-clockwise operation, speed 1.

  2. Allow to stand for 5 minutes to thicken.

Tip

Can be served warm or cold.  Yummy with honey, cinnamon or other flavouring.  

Great for gluten free/lactose free breakfast or snack.  Great alternative to yoghurt for school lunch.

    I halved the recipe and it still worked perfectly. It's amazing how such simple ingredients can taste so good....

    I used coconut milk 400ml+1ltr water and vanilla bean paste. Cooked for only for 26mins; served with a swirl of cream with passionfruit on top  tmrc_emoticons.)
