Ingredients

6 portion(s)

Custard

  • 500 grams coconut milk, (thickness of custard will change if using a milk containing gum)
  • 30 grams tapioca flour, (adjust to increase/decrease thickness)
  • 3 tablespoons Kuzu
  • 45 grams coconut palm sugar, (adjust to suit taste)

for Lemon Custard use:

  • 1 portion Lemon peel, (non white peel of 1 lemon, semi dried)

for Chocolate Custard use:

  • 2 tablespoons cacao powder, (adjust to suit taste)
  • 1 teaspoon Vanilla Bean Paste

for Chocolate Banana use:

  • 2 tablespoons cacao powder, (adjust to suit taste)
  • 50 grams Ripe banana, (if using banana, custard will be thicker)
  • 1 teaspoon Vanilla Bean Paste

Recipe's preparation

  1. 1. Mill kuzu 60secs/sp.9


    2. Add lemon peel (if using) and zest 30secs/sp.9


    3. Add sugar, tapioca and cacao (if using); 60secs/sp.9


    4. Add coconut milk and banana (if using); 7mins/90'C/sp.4

Tip

1. Recipe may be easily halved

2. Recipe works well with freshly made coconut milk

3. Custard refrigerates well and will thicken

4. Thickness may be adjusted by increasing/decreasing tapioca; due to the nature of tapioca, do not use more than 45g

5. Sweetness may be adjusted to suit taste or substituted with coconut palm sugar or raw sugar

    If you use banana, you could omit the kuzu or try a true cornflour/maize. Kuzu is a great ingredient for nourishing the gut if you have health issues.

    Hi.  This sounds great as I love custard and have been put on a dairy & wheat elimination diet.  Can you substitute kuzu with something else?
