Date and Coconut Slice

Ingredients

12 portion(s)

  • 80 g Desiccated Coconut
  • 190 g sugar
  • 130 g Self Raising Flour
  • 85 g Butter
  • 1 egg
  • 1 teaspoon vanilla essence
  • 120 g pitted dates
  • 1 tablespoon Milk
  • icing sugar, to dust

Recipe's preparation

  1. 1. Preheat oven to 180 degrees celcius

    2. Grease a 20 x 20cm square slice tray

    3. Melt butter 90 degrees 1 min 30 sec Speed 1

    4. Add and chop dates 10 sec Speed 8. Scrape down sides of bowl

    5. Add all other ingredients. Mix 10 sec Speed 4

    6. Put in pan - press down with fingers

    7. Bake for 30 minutes

    8. Leave in pan for 5 minutes before transferring to wire rack to cool

    9. Dust with icing sugar

    10. Enjoy!

    Great and easy slice. My whole family enjoys this slice. I halved the sugar as people commented.

    I also swapped 2 steps. I chopped the dates and then added and melted the butter. Saved a bit of mess in the bowl and no butter dripping off the lid and MC.

    Really nice. I only used 50g sugar and it was fine. Had it warm with cream. Will be warming up the leftovers and having with custard.

    Very very nice and easy to make - I halved the sugar and if I make this again I might even try it with out sugar at all. I thought 30 mins in the oven was over cooking it as the slice looked quite brown but I kept it in for the whole time and it was cooked perfectly.
