Date and Peanut Butter Protein Balls

  • 200 grams pitted dates, Dried
  • 100 grams Peanut Butter, Or any nut butter
  • 25 grams cacao powder, raw
  • 150 grams almonds
  • 50 grams rolled oats
  • 50 grams Protein Powder
  • 80 grams Rice malt syrup, I use Fibre Syrup instead
  • 1/2 level tsp salt
  • 40 grams water
  • 50 grams dessicated coconut

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Add dates, peanut butter and cacao powder to TM bowl. Mix 10sec/Sp6
  2. Scrape down sides. Mix 5secs/Sp6
  3. Add almonds, protein powder and salt. Mix 5secs/Sp6. (If using peanuts Mix 5secs/Sp5)
  4. Add syrup and salt. Mix 20secs/Sp4 Reverse
  5. Add 20 gm water. Mix 10secs/Sp4 Reverse
    If necessary repeat by adding small amounts of water at a time until mixture can bind (not sloppy).
  6. The mixture is very sticky. Wet hands and shape into balls and coat with coconut.
    Chill in fridge for a few hours to harden.

Tip

Qty will depend on the size of the balls you shape. These are quite rich so quite small balls are preferable.

Tip: Place shaped balls (eg 6 at a time) in a container with lid or a plastic bag containing the coconut and shake gently until the balls are coated.
