  • 125 g Chopped butter
  • 125 g pitted dates, Cup roughly chopped
  • 155 g white sugar
  • 125 g crystalised ginger, Roughly Chopped
  • 250 g water
  • 1/4 tsp salt
  • 1 level tsp bicarbonate of soda

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation

  1. Pre heat oven 180 °C. Grease & line 18cm square pan
  2. Place butter, dates, sugar, ginger, water and 1/4 tsp salt in bowl
  3. Cook 5 mins 100°C sp 1. Bring to the boil.
  4. Reduce heat and simmer for 2 mins 90°C sp1
  5. Stir in bicarbonate soda. Set aside for 15 minutes to cool.
  6. Add egg 10 sec speed 4 mix well
  7. Add self flour 10 sp 5. Spoon into pan & bake for 40 - 45 mins
  8. Stand in pan for 10 mins turn out onto wire rack
