If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
Place Juice and sugar in TM bowl. Reduce syrup by cooking
15 minutes/ 100 degrees / speed 2
Set aside to cool
Make Sorbet when syrup is cold
Place sugar into TM bowl. Mill 15 seconds / Speed 10
Add ice cubes, stoned doris plums and egg white or meringue and blend with the aid of the spatuala 1 min 30 sec/ speed 9
Serve Immediately - drizzle over plum syrup

Tip
Take care to remove all the stones from the Plums.
Tinned Black Doris plums are intensely flavoured; tart and sweet, however you can use stewed fresh plums too.
The sugar syrup elevates the flavour and texture of this simple sorbet
If you don't like raw egg white, omit and replace with 50 g crumbled meringue.
