Gluten Free Madeira cake

  • 150 grams raw sugar
  • 35 grams almonds
  • 3 eggs
  • 1 Lemon(Zest)
  • 100 grams gluten free selfraising flour
  • 2 tbsp Milk

Recipe's preparation

  1. 1. Line 20cm or 500g baking tin with baking paper and set aside

    2. Preheat oven to 160°C/140°C/315°F/Gas3

    3. Place almonds in TM bowl and mix 30sec / speed 9. Set aside.

    4. Place raw sugar in bowl and mix 20 sec / speed 8. Add butter to bowl and mix approx 40 sec / speed 4.

    5. Insert butterfly,  add 1 egg and mix 30 sec / speed 4.

    6. Add to TM bowl the ground almonds and lemon zest. With MC off, mix 40 sec / Speed 4 while adding remaining eggs 1 at a time.

    7. Sieve in GF SR flour and mix 20 sec / speed 4, MC on. 

    8. Scrape down sides and with MC off mix 40 sec / speed 4 while gradually adding the milk.

    9. Tip into baking tin and bake in over approx 60 mins.

    10. Turn out onto wire rack and allow to cool. slice then serve or freeze and eat later..

    Anyone tried it with non GF SR flour? We aren't coeliacs so I don't have GF SR flour. We love the store brought one but would much perfer to make our own.
