Golden Gaytime Truffles

  • 360 grams white chocolate
  • 90 grams Caramilk Chocolate
  • 1 golden gaytime ice cream, stick removed
  • 1 tbsp malt powder
  • 80 grams thickened cream
  • 200 grams malt biscuits

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Add cream and golden gaytime icream to Closed lid. Heat 100, sp4, 4minutes.
    Add 1 tbsp of the malt powder and mix speed 4, 3 seconds.
    Weigh in white chocolate and caramilk chocolate to Closed lid. Mix speed 2, 100 degrees, 2mins
    Empty contents into a seperate bowl and refrigerate for at least 2 hours.
    Meanwhile clean and dry bowl
    Place malt biscuits into bowl and select turbo function and blitz until resembles fine crumbs. About 4-5 times.
    Set aside in seperate bowl.
    Add dark chocolate to bowl and grate speed 9, 5 seconds.
    Scrape down side of bowl.
    Melt chocolate, 60degrees, speed 1, 3 minutes. Put into seperate bowl.
    Line a tray with baking paper. Working in batches (keeping the remaining truffles in the fridge), use a skewer to dip the truffles into the dark chocolate to coat. Transfer the truffle to the biscuit crum and roll to coat. Transfer to the prepared tray, and place back in fridge.
