Pudding or Individual Puddings

  • 350 grams Dried Raisens, Can use Dates or Combination of other dried fruits
  • 270 grams Plain Flour.
  • 120 grams raw sugar, Other other sugar
  • 1/2 - 1 level teaspoon Nutmeg, Or Spice
  • 120 grams Butter
  • 260 grams Milk, If adding a little Brandy or other wine reduce milk accordingly
  • 15 grams Bi-Carb Soda (Baking Soda), 1 level dessertspoon
  • 1 tablespoon white vinegar
  • 1 tablespoon brandy or alcohol (optional)

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    For Single Pudding - Grease 11/2 litre container to hold pudding mixture For Individual puddings - Grease about 16 individual silicone moulds
  1. Weigh 350 grams raisens or dates into TM bowl
    Add 70 grams of plain flour

    Using Turbo, cut up Raisens for 1 second X 3 If need more chopping repeat.

    Weigh in 200 gm flour, 120 gram sugar and add nutmeg.
    Mix 8 secondsSpeed 3. Set aside in a bowl.

    Weigh 120 gram butter and 260 gram milk into TM bowl.

    Weigh 15 gram Bi-Carb Soda, set aside. (1dessert spoon)

    Heat and Melt butter & milk 4.5 mins/Speed 3/90 degrees. It will boil.

    While Hot add Bi-carb soda through the hole in the lid, it will froth up.

    Add tablespoon white vinegar

    Mix 5 seconds/Speed 3

    Add other dry ingredients and liqour if using.

    Mix 10seconds/Speed 3 - May need to scrape down sides of bowl mix again.

    Place mixture into prepared container or moulds and place in the Varoma. Use both levels for small moulds. Cover tops with greased baking paper to stop steam causing moisture on top of the puddings but only cover the tops or top of pudding(s)

    Wash TM bowl and add 1200 gm water.

    Place Varoma on top.

    Steaming

    For Individual moulds:

    Cook 20 mins/Varoma/Speed 4

    For single pudding:

    Add 1600 gm water to bowl. Make sure you always have enough water in the bowl.

    Cook 2 hours/Varoma/Speed 4

    Can do this in 2 lots of 60 minutes.

    Always check there is water in the bowl.

    Remember you need 500 grams of water for first half hour and 250 gms for every additional 15 minutes.

    To Cook on Stovetop
    Can simmer in closed pudding steamer in saucepan for 2-2 1/2 hours on stove top.

    Remember

    To grease steamer with butter

    Allow to cool and then remove pudding from steamer

    Puddings are cooked when skewer comes out clean.

    I use my pudding steaming bowl which is 1.5 litre. I cover it with baking paper as it won't fit in varoma with the lid on.

    I substituted  the flour for gluten free flour - wasn't sure how it would go, but it was still delicious. I will definitely be making this one again. So good.  I used whatever dried fruit I had in the cupboard which ended up being a combination of saltanas, dates and glacé cherries - really yum!
