      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Line one of grans old fudge tins with baking paper. Usually a tin plate about 22cm but can be any shape
  2. Break the chocolate up into your bowl then chop the chocolate, 5 seconds, speed 7. Then either put this in another bowl or use your 2nd bowl for the next steps
  3. Put the butter, caster sugar, evaporated milk and marshmellows into the mixing bowl amd cook 8 mins 100 deg speed 3. DO NOT have your measuring cup on. You can use the steaming basket if you need to
  4. then cook for 20 mins on Varoma speed 3 NO MEASURING CUP LID, use steaming basket if you need to
  5. Add the chopped chocolate and vanilla then mix 10seconds speed 4
  6. Quickly put the mixture into the prepared dish to set. Once its cold enough pop in the fridge to cool completely ENJOY

Tip

I use whittikers dark ghana but this is just as good using milk or white chocolate.

Make icecream with the left over evaporated milk or make another batch of fudge
