Halawet El Rez

  • 240 g rice, Rinsed well
  • 800 g water
  • 350-400 g sugar
  • 1 tsp Mastika, Crushed
  • 1 tbsp Rosewater
  • 1 tbsp Orange Blossom Water
  • 350-400 g Curd Cheese (sweet cheese), Sliced into 2mm thick slices

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add rice and water into Closed lid and cook for 40min/100°/sp2
  2. Add sugar and cook for another 5min/100°/sp4. Give a couple of stirs with aid of spatula if sugar does not mix well into the cooked rice.
  3. Add remaining ingredients and stir for as long as you like depending on how much you like cheese melted through/Counter-clockwise operationspeed 3.

Tip

If you like your cheese still a little chunky, at step 3 let it stir in reverse for a few seconds, remove mixing bowl lid and stir by hand with your spatula till you achieve your desired cheese consistency.

Garnish with crushed pistachios if desired
