Healthy Ricotta Pancakes

Ingredients

4 portion(s)

  • 3 organic eggs
  • 1 tablespoon Flaxseed or Chia Seed
  • 100 grams rolled oats, (or 45 grams Coconut Flour for Gluten Free)
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon (ground)
  • 150 grams Ricotta (good quality deli style), (Or substitute mashed banana for dairy free)
  • 125 grams Milk (Dairy or Nut Milk)
  • Serve with berries, banana, yoghurt etc

Recipe's preparation

  1. Combine eggs, milk, oats, cinnamon, baking powder and chia in tmx bowl (10 seconds speed 2) – rest for 15 minutes to soften the chia and oats. Give it a mix (10 seconds speed 2) half way through resting.
    Add ricotta and mix (10 seconds, speed 2 or until ricotta is just mixed through).
    Heat a non – stick pan over a low – medium heat with a little macadamia nut oil, olive or coconut oil and spoon in the pancake mix, 2 tbsp of mix per person.
    Flatten the top out slightly from each pancake.
    Turn down the heat and cook over a low heat so that it cooks through.
    Flip over and cook the other side.
    Serve with blueberries,  thick organic natural yoghurt , banana + a little raw honey

Tip

Depending on the size of your eggs, this mixture can appear a little too runny. If so, I just add more oats or a couple of tablespoons of spelt flour to thicken!

    I found they needed a bit of a flavour kick, so I added nutmeg and frozen blueberries to the mixture the second time I made it... Success!
