For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation
- Add butter.
Melt 2 minutes / 55 degrees / speed 1 - Once melted, add almond meal and sweetener
Mix 20 seconds / speed 3
Add mixture to a lined tin and put in fridge to set. - Add mixture to a lined tin and put in fridge to set.
Clean and dry bowl - Add cream cheese to bowl.
Mix for 10 seconds / speed 3 - Add cream and dissolved jelly mixture
Mix 30 seconds / Speed 3 - Scrape mixing bowl.
Mix 15 seconds / speed 3 - Pour cheesecake filling onto base and set in fridge.
Once cheesecake has almost fully set. Carefully pour cooled down jelly topping over the filling.
Put back in the fridge until fully set

Tip
Use any flavour sugar free jelly you want. For the one pictured is Mango Passion Aeroplane Jelly.
When pouring over jelly topping at the end, make sure the jelly isn't too hot. Use the back of a spoon to help pour it in

This recipe is super easy and I've made it so many times. It's one of my favourites.
I have found by whipping the cram first and then folding through gives a really creamy texture. Also when making using lime jelly I put a little coconut into the base. A real hit with the family.
