Base

  • 125 g Butter
  • 120 g raw sugar
  • 1 egg
  • 220 g SR flour

Filling

  • 395 g can sweetened condensed milk
  • 120 g lemon juice, Approx 3 Lemons

Topping

  • 500 g water
  • 120 g raw sugar
  • 3 tablespoons custard powder
  • Water to mix with custard powder
  • 4 Passion Fruits

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Base
  1. Dough modeAdd sugar & mill for 5 seconds on speed 10
    Add butter & mix for 10 seconds on speed 5
    Add egg & mix for 20 seconds on speed 5
    Add SR Flour & mix for 10 seconds on speed 5

    Press the mixture into a lined lamington tin and bake in the oven for 20 minutes at 180 degrees.
  2. Filling
  3. Clean & dry mixing bowl
    Add condensed milk
    Add lemon juice
    Mix for 15 seconds on speed 3
    Pour filling over the base once it has cooled slightly.
  4. Topping
  5. Clean & rinse mixing bowl
    In a separate bowl add some water to the custard powder & stir to make a liquid - set aside
    In a separate bowl add the pulp of 4 passion fruits - set aside
    Add water and sugar to mixing bowl
    Cook for 2 mins, Varoma temp on speed 2
    Add custard powder mixture and cook for 6 mins, Varoma temp. on speed 3
    Add passionfruit pulp & mix for 10 second on speed 3
    Pour the topping over the filling and refridgerate for 3 hours before slicing and serving tmrc_emoticons.)

    Absolutely delicious.

    The taste is great. I cannot stop eating it. I do not normally eat sweet things.

    I also like that the base does not have coconut in it.
