- 250 grams raw cashews
- 150 grams coconut flakes
- 50 grams Maple syrup
- 3 tablespoon lemon zest
- 2 tablespoon lemon juice
- 1 teaspoon Vanilla Paste

Place all ingredients in Thermomix , reserving 50g coconut flakes, and mix 30sec/speed10.
Add remaining coconut and mix 5sec/speed 5
Line a small baking tray with glad wrap and spread mixture evenly. Holding the cling wrap lift the mix out off the tray and cut into 12 bars or 20 bit size pieces. Store in the Fridge. Can be Frozen.
