Lemon Ricotta Pancakes

  • 1 lemon rind
  • juice of 1 lemon
  • 150 g Self Raising Flour, or GF self raising flour
  • pinch salt
  • 1 tsp bicarb soda
  • 25 g Butter
  • 50 g Maple syrup
  • 125 g Fresh ricotta
  • 250 g Milk
  • 1 tsp vanilla extract or paste
  • 1 egg

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add lemon rind to bowl and blitz 5sec/Speed 7.  Scrape down bowl and repeat if necessary.  Remove from bowl and set aside.

  2. Add butter to bowl and melt 2min/50deg/Speed 2.

  3. Add all remaining ingredients including lemon zest and mix 10sec/Speed6.  

  4. Scrape down sides of bowl and mix again 10sec/Speed 6.

  5. Fill Measuring Cup with batter and use it to pour desired amounts into medium-hot oiled pan.  Turn when bubbles appear on top of pancake and cook another 30 - 40 seconds.

  6. Serve with berries, honey and lemon juice or toppings of choice.

    Made these for breakfast as we had some smooth ricotta in fridge to use up. Didn’t have lemon so just made plain pancakes. My husband and I thought these were delicious. Big call but we thought these were the most delicious pancakes ever!! Awesome recipe!! We’ll definitely make again.

    These are delicious! My daughter loves lemon pancakes and she loved these. I had double the amount of ricotta in the fridge so I just threw it all in. Will definitely be making these again.
