Icecream Mixture

  • 60 grams sugar
  • 6 lemons, large
  • 5 3 eggs + 2 yolks
  • 75 grams pure icing sugar
  • 200 grams Milk
  • 200 grams thickened cream
  • 3 tablespoons limoncello liqueur

Recipe's preparation

    Ice cream
  1. 1. Mill sugar 5 seconds / speed 7.

    2. Juice lemons, strain and add juice to sugar.

    3. Cook 10 minutes / Varoma / speed 2.

    4. Set syrup aside to cool.

    5. Add eggs, yolks and icing sugar to TM bowl.

    6. Insert butterfly and mix 5 minutes / speed 4.

    7. Add milk and cream.

    8. Cook 10 minutes / 90C / speed 1.

    9. Add syrup and limoncello, mixing for 30 seconds / speed 2.

    10. Pour into a shallow container lined with baking paper higher than sides for easy removal.

    11. Freeze overnight or for 8 hours.

    12. Add chunks of icecream gradually to TM bowl, mixing 1 minute / speed 9 or until smooth and creamy. Refreeze in deeper container.

    Great ice cream. 150ml lemon juice works perfectly! I made 1.5 quantities and fits perfectly in the long ice cream container.

    This icecream tastes amazing. I used caster sugar & didnt mill. Used Pouring cream, 150g of lemon juice a added an extra tablespoon of limoncello. Everyone loved it. Tastes like a lemon cheecake. Thanks Heather

    After posting my limoncello recipe, I just had to try this icecream recipe.
    What a fabulous recipe it is. I’m disappointed for Heather who posted this recipe, that it’s taken 5 years for a positive feedback comment. This serves as a reminder to all of us about the value of trying random recipes and then giving fair and kind feedback comments.
    Don't be confused with the ingredient list - it should be 3 eggs + 2 egg yolks (probably would work fine with 5 egg yolks). After juicing 5 large lemons, I called it quits with 200g of strained lemon juice. 200g produced a tart and delicious icecream and next time I’ll try 150g. I used regular whipping cream. No need to process the sugar in step, otherwise the recipe steps work perfectly.
    Probably the alcohol in the limoncello contributed to smaller ice crystals and produced a lovely smooth texture. I suspect substituting vodka if you don’t have limoncello would produce a pretty good result.
    This is a very highly recommended recipe!
