Low-GI Choc-nut Melts

Ingredients

  • 150 g brown sugar
  • 2 tablespoon cocoa
  • 60 g Milk
  • 15 g peanut oil
  • 80 g Smooth peanut butter
  • 120 g rolled oats

Recipe's preparation

  1. 1. Line a large baking sheet with baking paper or set out 36 mini cupcake papers.

    2. Add sugar, cocoa, milk and oil to TM.  Cook for 4 mins, 90 degrees, Speed 1.

    3. Add peanut butter and rolled oats to mixture. Stir 1 min, Speed 1.

    4. Using 2 teaspoons drop 36  teaspoonfuls onto baking paper or mini cupcake papers.

    5. Refrigerate until set.

Tip

These are low-GI treats converted from a recipe in Sustained Energy for Kids.

    Great simple recipe. I used coconut oil and rapadura sugar in place of peanut oil and brown sugar and was fantastic. Will try with a little less sugar next time
