Mango and Lemon Curd Tarts

  • 1 portion Almond Pastry, From the everyday cookbook (page 120)
  • 1 Batch of Lemon Butter, Everyday cookbook (page147)
  • 2 mangos, Diced into small pieces
  • 1 --- Tub Mascarpone cheese

Recipe's preparation

    Mango & Lemon Curd Tarts
  1. Preheat oven to 180oC
    2. Make pastry and wrap it in the thermomat or glad wrap and put it in the fridge for 15min.
    3. Roll out the pastry to about 3mls and use a 4-5 cm round pastry cutter.
    4. Cut out rounds and push them into 2 patty tins, then prick with a fork and bake until just golden.
    5. Mix equal parts of the lemon curd and mascarpone cheese together.
    6. Spoon into the cooled pastry cases and top with a few pieces of mango.
    7. Left over tart cases can be frozen or kept in the fridge.
    8. YUMMO !!!! ENJOY

    I made one whole flan rather than individuals. I didn't have any mascarpone cheese so I omitted this ingredient; however, the taste of the flan was amazing. A huge hit with the family!

    Made these for fathers day lunch.  I didn't add the mascarpone as we didn't have any.  Worked out fine  tmrc_emoticons.) Topped with some strawberries or kiwifruit - YUM!  Even some left over lemon curd in the fridge tmrc_emoticons.)

    I have just gone through the last 3 reprints from 2009 to 2011 and its on page 120 in all three books it is after the choux pastry if that helps. There has not been any major changes with the reprints. If still have no luck let us know and we will send through a copy for you.

  • I found the Lemon Butter

    I found the Lemon Butter recipe in The Everyday Cookbook on page 220.  I haven't been able to find the Almond Pastry recipe yet.  It's definitely not on page 120 (Beans).  I'm working with an electronic copy (scanned PDF) of The Everyday Cookbook which is a lot harder to flick through.  Given that it's a very old book, are there differences between printings?  The copy I'm looking at is from 1889.
