Sorbet

  • 100 grams Raw Sugar (brown)
  • 150 grams frozen lychees, (drain tin & place lychees in freezer)
  • 200 grams frozen mango
  • 1 Egg white (optional)
  • 350 grams ice cubes

Recipe's preparation

  1. Place sugar into mixing bowl and mill for 10 sec/ speed 9.


     


    Add Frozen Lychees, Mango and Ice and blend for 20 sec/speed 10, gradually increasing speed from 1 to 10. Use the Spatula to assist with moving the mixture around. 


     


    Add the egg white and blend for a further 1 min/speed 10, Again using the spatula to assist.

Tip

This will freeze well and the Kids just love it!! 

Adjust the sugar to taste.

 Fresh Lychees and Mango could be used, I just used tinned Lychees and frozen Mango chunks.

    Ended up with large granules.
    Not sure if the ice or the sugar didn't chop properly but next time will add the ice and chop first before adding the fruit.

    Used 300gm frozen mango. Next time I think I will cut up the mango cheeks first, thought poor Gertrude was going to die on me. Nearly overloaded her, she did not sound like she was at speed 10! Once I had taken some out for the child who is allergic to egg, then she sounded more like she was at speed 10 and I also added some egg white. Definitely delicious with egg. Then took most out and added some raspberries for the child who wanted raspberry, and that was delicious. Added some extra icing sugar also.
