Maple steamed custards

Ingredients

custard

  • 200 grams Pouring Cream
  • 200 grams full cream milk
  • 4 organic free range eggs
  • 50 grams pure organic maple syrup
  • 1 teaspoon vanilla bean paste or essence
  • pinch sea salt

Recipe's preparation

  1. Place all ingredients into TM bowl and mix 15 sec/speed 4.

    Divide mixture into 4( depends on the size) greased individual ovenproof bowls. ( check that they will fit into the varoma).Depending on the size of bowls you may be able to use the basket and tray of the varoma.

    Sprinkle with nutmeg.

    Fill  rinsed TM bowl with 500gm water and steam the custards for 30 mins/100deg/speed 3.

    Check  the custards are cooked by inserting a sharp knife into one. If the knife comes out clean then they are done. If not, continue cooking  for another few minutes. Do not overcook. The custards will set further when cool.

    Optional

    Sprinkle with granulated maple sugar ( if you are lucky enough to have some) or coconut or rapadura sugar. Use a small blow torch to caramelize the sugar.

    Refrigerate and serve on their own, or with a dollop of cream or icecream.
