Mars Bar Cookie Cake
- 170 g Butter, cubed, softened
- 100 g brown sugar
- 2 eggs
- 1 tsp Vanilla Paste
- 250 g plain flour
- 2 tsp cornflour
- 1 tsp bicarbonate of soda
- pinch salt
- 150 g milk chocolate chips, reserve extra
- 50 g White Chocolate Chips, reserve extra
- 5 Mars Bars, diced

Recipe's preparation
- Preheat oven to 180°C. Line a 23cm spring form cake tin with baking paper.
- Place 170g butter and 100g sugar into TM6 bowl and mix 30 sec/speed 5.
- Scrape down sides
- Add 2 eggs and tsp vanilla and mix 30 sec/speed 5.
- Scrape down sides
- Add 250g flour, 2 tsp cornflour, 1 tsp bi-carb soda and pinch salt and mix 20 sec/speed 4.
- Scrape down sides
- Add 200g of choc chips and chopped Mars Bars 20 sec/
"Counter-clockwise operation" /speed 2.
- Gently distribute and press down the mix into cake tin.
- Bake in the oven for 20 mins
- As soon as you remove the cake from oven, sprinkle remaining choc chips on top.
- Allow cake to cool a little on wire rack before serving. It should be a little gooey and chewy on the inside and crunchy on the outside.
- Slice and serve warm with ice cream or a dollop of cream if desired.
