  • 250 g Boiling water
  • 450 g white sugar
  • 2 tsp vanilla essence
  • 1 tsp lemon juice, (optional)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Put cold water in a bowl and sprinkle gelatine over ensure all gets wet. Set aside.

     

    Put sugar and boiling water in the TM bowl and mix for 4 minutes, 98 degrees, speed 2 until dissolved.

     

    Add gelative mix. Cook for 20 minutes 100 degrees, speed 2, no MC.

     

    Allow to cool to room temperature (this requires a lot of patience as it will take a couple of hours).

     

    Insert butterfly. Add vanilla, lemon juice and food colouring (if using). Mix for 15 minutes, speed 3.5 until very thick (aka fluffly marshmallowy goodness).

     

    Set in fridge for at least an hour (preferrably a few but you may not ba able to resist).

     

    When set you can cut into chunks and coat in toasted coconut.

Tip

Not sure how it will in TM 31 bowl. If using a TM31 you may need to reduce quantity as the TM5 bowl ends up very full.

    Have used this in the Wagonwheel slice (cookidoo) instead of melting store-bought .

    Love fantastic! So easy and yummy.

    i made half quantity in my TM31, only came to half way mark so will try full recipe next time, I also waited for mixture to completely cool (no lights on temperatures) before whipping, was so lovely and thick that I had to work fast to get it into my sherbet cones before it started firming.
