Mixed Berry Coconut Fudge

  • 450 grams Shredded coconut
  • 250 grams Mixed berries of choice, If frozen, thaw them out
  • 150 grams Honey raw
  • 1/2 level teaspoon vanilla extract
  • 1/2 level teaspoon Lemon/lime/orange zest

Recipe's preparation

  1. Place the coconut into bowl and temp 37/sp 9/3 mins, pause and scrape down sides about halfway. 

    Add mixed berries (thawed if using frozen berries) and mix sp6/30sec or till smooth. 

    Add honey and vanilla and zest and mix sp6/30sec or till smooth. 

    Pour into a slice dish lined with baking paper then use a knife and spatula to smooth it out and fill to the edges. 

    Place in freezer to set then slice into portions.

    I thought these would make a great snack for the kids & made the recipe exactly, but they didn't really like them. I have ended up putting the portions back in the freezer and I snack on them! I find them okay but probably won't be making again.

    So yummy I did change it a little as I can not eat honey so I used Zylitol as the sweetner and I also did not have enough des coconut on hand so i used some coconut oil. I added a bit of lemon juice also.

    Thank you so much for this recipe it was a hit with everyone.

    I loved these!!  I am working with the ' changing habits' philosophy of healthy eating. I did take a plate to share with friends, but wasn't popular against a creamed pavlova. But they will used to my new philosophy of food!! This is going into my favourites!!  Thankyou for sharing
