Nanna Lowes Christmas Pudding
- 1 packages Suet, dry suet from the grocery isle
- 60 gram plain flour
- 1 pinches salt
- 800 gram mixed dried fruit
- 60 grams almonds, Slivered of chopped
- 220 gram brown sugar
- 200 gram bread, fresh
- 4 --- eggs
- 120 grams Boiling water
- 1/2 teaspoons bicarbonate of soda
- 2 heaped tablespoons mixed spices
- 1 heaped tablespoons ground ginger
- 1 heaped tablespoons ground cardamom
- 1 heaped tablespoons ground cinnamon
- 1/2 bottles bourbon, Brandy, scotch, port ,any liquor you like

- Mix the spices and the alcohol with the dry fruit and almonds at least 24 hours in advance - I like to have mine marinating from October. Give it a stir when you walk past it every so often. Keep in a covered container. I like to use up near empty bottles of booze- I have been known to use port, red wine, muscat, sherry bourbon . I like to mix it up each year
- Blend speed 6 for 10 seconds broken up bread leave in bowl
- Mix all dry ingredients (sugar, suet,flour, salt ,breadcrumbs) together speed 4 for 4 seconds
- Mix bi carb and boiling water together in a cup before adding into bowl then add marinated fruit ,eggs,"Counter-clockwise operation" speed 3 for 5 sec or until combined
- Put the mix into greased pudding dish- cover with baking paper and tie with string.Put 2 litre of water in bowl and steam in varoma for 3 1/2 hours on varoma temperature . Alternatively in a glass ,enamel dish in a pot with simmering water with baking paper and brown paper covering the top tied with string . (The two layers of paper help keep moisture off the top of the pudding) do not let the bowl run dry - i normally top up after the first 99 mins

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
