Nanna's Lemon Sago

  • 90 grams Seed Tapioca (sago), 1/2 Cup
  • 445 grams water, 2 1/3 Cups
  • 70 grams sugar, 4 tblsp
  • 100 grams lemon juice, Approx 2 lemons
  • 80 grams golden syrup, 4 tblsp
  • rind of 1/2 lemon, finely chopped

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Place sago/seed tapioca pearls in thermomix jug with water. Cook for 15mins, Varoma, Reverse Speed 0.5 until Sago pearls become transparent.
  2. Add sugar, lemon juice, lemon rind and golden syrup in thermomix. Mix 1 minute, Varoma, Reverse speed 1.
  3. Pour into a dish to set. I uaually put mine in the fridge and serve cold with warm custard.

    Works perfectly. I used 2 lemons which was more than 100g but I always make mine extra lemony so spot on.
