Paleo Chocolate Mint Slice

Ingredients

12 portion(s)

Base

  • 80 grams raw almonds
  • 30 grams cacao powder
  • 60 grams Shredded coconut
  • 5 pitted dates
  • 4 tablespoons coconut oil
  • 1 tablespoon Raw Honey

Filling

  • 200 grams raw cashews
  • 30 grams Shredded coconut
  • pinch Himalayan salt
  • 60 grams Raw Honey
  • 1.5 teaspoons Mint or Peppermint Natural Extract, (quantity to taste depending on brand)

Topping

  • 50 grams Raw Honey
  • 20 grams cacao powder
  • 70 grams coconut oil
  • 10 grams vanilla extract

Recipe's preparation

    Slice Base
  1. Place almonds, cacao powder, coconut and dates in Closed lid. Mill 9 seconds/speed 9.

  2. Add coconut oil and honey, blend 5 seconds/speed 5.

  3. Press into a square slice baking tray, ensure tin is lined with baking paper. Do not grease tray. Place in freezer/fridge whilst making the filling.

  4. Filling
  5. Blend cashews, coconut and salt in Closed lid15 seconds/speed 8, scrape sides 8 seconds/speed 8. Ensure smooth consistency.

  6. Add honey and peppermint, blend 10 seconds/speed 5. Scrape and REPEAT.

    Press filling onto base and place back into freezer whilst making chocolate.

  7. Topping
  8. Place honey, cacao, coconut oil and vanilla in Closed lid, blend 10 seconds/speed 4. Scrape and repeat until consistency is smooth. Smooth over filling, refridgerate for 30 minutes.

     

  9. Cut into your choice of portion sizes and enjoy tmrc_emoticons.)

    This recipe is great! I substitued different nuts, and used macadamias and hazelnuts as well as cashews (same weight, just threw in handfuls to make up the same weight) and was delicious. Had to hide from my husband as he was eating too much too soon!Big Smile

    Awesome Mint Slice! Thanks heaps for sharing it. I used food grade peppiment essential oil instead of peppiment extract (3 drops in the filling & 2 drops in the topping). I'm thinking of doubling the filling and topping next time to make it a thicker slice. Please share any more healthy refined sugar free, gluten free, dairy free, egg free recipes that you have.

    Holey god. This is delicious. I was a little worried as some raw things dont turn out that great, but this is exactly like naughty peppermint slice. Dont think it will last the week in our fridge. I also added a sprinkle of greens powder  to make the middle bit green like mint. Worked great.

    yum! Didn't have enough coconut oil for topping so we did a mixture of coconut oil, dark chocolate and a little more mint extract melted together on low heat then spread on top and set in freezer. You have to be a little careful when slicing but it came up a treat. Thank you!

    Absolutely delicious! Thanks for a really tasty and easy to follow recipe.  I used maple syrup instead of the honey and it turned out fine. I also added a little  peppermint oil to the top choc layer for more of a mint kick.

    This recipie is delicious! I have made a couple of times, this time using mint in the chocolate for an extra minty flavour. Also I add a heaped teaspoon of barley grass powder to make the filling green.

    This slice is absolutely delicious! Especially the chocolate topping. The inside is also a beautiful chewy texture. I replaced honey with rice malt syrup (not paleo) as I wanted a sweet but not honey flavour, and it worked out perfectly. Even my husband who is extremely fussy loved it! I did some rough calculations on nutritional content and it is around 250g fat, 160g carbohydrates and 27g protein for the entire recipe. tmrc_emoticons.)

    This was sooooooo tastey!! I got all excited when I saw thi and dove in to make it... last minute I realised I had no mint extract left so just when vanilla. The base was a little crubbley but still tasted amazing! Thanks for sharing tmrc_emoticons.)
