Paleo Frosting-Fudge (GAPS, Low Lactose, Gluten Free, Cane Sugar Free)

Ingredients

Frosting

  • 150 grams Butter, or ghee (for almost lactose free)
  • 150 grams coconut oil
  • 50-100 grams raw local honey, I used 70 grams of prickly box

Additions

  • These are all optional
  • 1 teaspoon vanilla extract, Full GAPS legal
  • spices, ginger, cocoa, coffee or cinnamon if you want
  • choc chips
  • dry fruit or christmas fruit mince

Recipe's preparation

    Simple Frosting Fudge
  1. You should soften the butter (and definately soften ghee if using), but I didnt. 

  2. Add all the basic ingredints to the bowl of your Thermomix and add any extracts or spices if using. 

  3. Blend increasing the speed slowly from 2-6 for 20 seconds. Scrape down and blend for 10 seconds on speed 8 to whip it up a little. 

  4. Your frosting is now ready to ice anything you like. I most like it on a spoon! But great to sandwich together cookies or to ice a cake or cupcakes. 

  5. If you are going to add any other additions like choc chips or fruit then stir them through on speed 2 before removing from the bowl. 

  6. Fudge
  7. To make it fugde simply scrape into a plastic wrap lined cake tin or tupparware and smooth flat. Refrigirate until set then cut into pieces and enjoy straight from the fridge. 

  8. A really neat trick is to make half vanilla and half say chocolate then layer them in a tin or swirl them.

Tip

Make sure once you have gotten as much as you can out of the mixing bowl you put the lid back on and turn to a high speed to get all the frosting-fudge off the blades (this is the Chefs Tax and should be eaten).

 

You can make any flavour of frosting-fudge you like! From gingerbread (with ginger powder), to pumpking pie by adding a few cubes of cooked pumpkin and spices or lemon frosting with zest and a little juice....

    This is GAPS stage 1 legal if you have introduced ghee and coconut oil, just omit any flavourings and only use 50g of honey. A really great way to get enough good fats into you, as we are struggling to make meals high fat enough (lol).
