- 4 eggs, large
- 400 g caster sugar, 2 cups
- 250 g Butter, softened but still cool
- 250 g full cream milk, 1 Cup
- 600 g Self Raising Flour, 4 cups
- 1 tablespoon flavouring of choice

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
Preheat oven 180°C and line 4 x 6 cupcake silicon trays with cupcake wrappers
Cream Butter, Sugar & Eggs Speed 4 / 2 minutes or until fluffy
Add remaining ingredients Speed 4 / 15 sec then use spatula to scrap the sides and incorporate the mix a little.
Then Speed 4-6 for 2 minutes
I use a metal ice cream scoop to evenly distribute the mix between 24 cupcakes.
Bake for 18-20 minutes
Mixture can be halved if only needing 12 cupcakes
