  • 6 persimmon, peeled and deseeded
  • 200 g sugar
  • 2 eggs
  • 400 g buttermilk
  • 1 level tsp bicarbonate of soda
  • 190 g plain flour
  • 1 level tsp baking powder
  • !/2 level tsp cinnamon, Ceylon
  • 1 pinch sea salt
  • 30 g yoghurt, can use cream

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Recipe's preparation

    Persimmon pudding
  1. 1. Pre melt butter in thermomix or microwave ( 2 mins 50 deg should do it) grease a baking dish 22cm x 33cm and set the rest aside in a bowl. Pre heat oven to 180 deg.
    2. add persimmons peeled and deseeded and cut into quarters into the bowl and puree spd 5/10 secs.
    3. add sugar, eggs, buttermilk and bi-carb and mix spd 4/10secs.
    4. add flour, baking soda, cinnamon, salt, yoghurt and melted butter. mix 10 secs/ spd 4.
    5. scrape bowl and mix for another 5 secs/ spd 4.
    6. pour the batter into the baking dish and put the pudding into the oven. Bake for one hour pudding should go a dark brown and rise then fall when cooling.
    7. Serve with youghurt, cream or icecream.

Tip

Can replace the buttermilk for natural yoghurt and replace butter with ghee to make dairy free.
