  • 300 gram Pineapple, chopped into pieces
  • 0.5 litres pineapple juice, Frozen in icecubes
  • 1 lime, Peeled

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Sorbet
  1. Place the sugar in the TM bowl.  Mill on speed 9 for 20 seconds.  

  2.  Add the fresh pineapple to bowl and chop speed 6/ 10 seconds. 

     

  3. Add Frozen coconut milk, pineapple juice and lime and process for 1 minute speed 9 – using spatula to stir as required.

Tip

Note: - you can give this some gut healing goodness by using coconut milk that has been cultured with Kefir grains prior to freezing. Or by stirring through the powder from a couple of good quality probiotic capsules when you process.

 

Pineapple has enzymes in it which help with digestion making this sorbet a great end to a rich meal.

    I didn't add any coconut milk as it wasn't in the ingredient list and with the infredients it included it was a delicious sorbet! Does not look anything like the picture provided and without the coconut not piña colada like but very yummy!!
