Pineapple and Pumpkin Poe - from French Polynesia

Ingredients

8 portion(s)

  • 230 g Butternut pumpkin (chopped, fresh, peeled)
  • 120 g Sago
  • 400 g coconut milk
  • 250 g water (= 1 cup), or use liquid from can of pineapple
  • 225 g pineapple pieces (drained and unsweetened, if canned)
  • 45 g raw sugar
  • 65 g brown sugar

Recipe's preparation

  1. Put pumpkin into TMX bowl, using pieces small enough to fit through the hole in the lid. 

  2. Chop on speed 5 for 5 secs. 

  3. Add sago, coconut milk and water into TM bowl and stir gently for 40 minutes at 37 degrees on reverse/ speed soft. 

  4. Turn up to 100o and cook for further 10 minutes on reverse/speed 3.
     

  5. Add drained pineapple, 45g raw sugar and 65g brown sugar.  Mix 5 secs on speed 5. 


    Lower heat to 90o and cook for 30 mins/90o/reverse/speed 2.
     

  6.  In Tahiti, the pineapple and pumpkin poe was served with boiled bananas and coconut cake.

Tip

In a private home in Tahiti, I was introduced to this dessert, based on the starchy manioc root.  The authentic Poe is incredibly sticky, so much so that it was very difficult to serve, but I have toned down the full-on Tahitian version and used the most accessible ingredient related to manioc available here, sago.
