Raw Caramel Slice

Ingredients

Base Layer

  • 10-15 medjool dates
  • 2 cups Shredded coconut
  • 1/2 cup Caramelised buckinis

Centre Layer

  • 1/2 Cup tahini
  • 1/2 Cup Honey
  • 1 tsp Vanilla Bean Paste
  • 1/4 Cup Coconut oil

Top Layer

  • 200 g raw cacao butter
  • 50 g Raw cocao powder
  • 100 g Rice malt syrup/ maple syrup
  • 1 tsp Vanilla Bean Paste
  • 1/8 tsp fine sea salt

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Base Layer
  1. Place all ingredients for base layer in the mixing bowl and blend 30 seconds, speed 7 or until resembling sticky crumbs.

    Add more dates if not sticking together.

     

  2. Line square based tray with baking paper and press mixture firmly into the base. Place into freezer.

  3. Centre Layer
  4. Place all ingredients into mixing bowl and blend 20 seconds, speed 3 or until all combined.

  5. Spread mixture over base layer and place back in freezer.

  6. Top Layer
  7. The top layer is made using Quirky Cooking's amazing Dairy Free Raw Chocolate recipe (//www.quirkycooking.com.au/2010/11/dairy-free-raw-chocolate/

     

  8. Once completed pour chocolate mixture over the middle layer and put tray back in freezer for 30mins.

  9. Slice and serve.

  10. Note: These slices are best kept stored in the freezer.
