Raw Lemon Slice

Ingredients

Base

  • 170 g Shredded Coconut (or dessic)
  • 10 medjool dates, pits removed

Topping

  • 400 g Natural macadamia kernels
  • zest of 1 lemon
  • juice of 1 lemon
  • 150 g Maple syrup
  • 1 tsp Vanilla Bean Paste

Recipe's preparation

    Base
  1. Line a slice container (approx 20x30cm) with baking paper.

  2. Blend coconut and dates 30 sec/speed 8 then press down firmly into container.


    Place in freezer while you prepare topping (optional).

  3. Topping
  4. Mill macadamia kernels and lemon zest for 20 sec/speed 7. Scrape down sides.

  5. Add all remaining ingredients and mix 20 sec/speed 5.

  6. Pour onto base and spread evenly.


    Freeze for at least 1 hour before slicing.

  7. Remove baking paper and slice in approx 4x4cm squares (or as desired). Serve and store frozen (or in fridge).

Tip

You can press the mixture into a mini muffin tray if you have time to make them into more fancy lemon bites.

 

The lemon topping is quite soft, which is the way I like it. If you prefer a firmer topping you can mix in some coconut oil in the last step.
