Raw Pistachio & Walnut Truffles

Ingredients

Truffles

  • 120 grams blanched almonds
  • 150 grams medjool dates, Pitted
  • 50 grams Pure Maple Syrup
  • 1 heaped tablespoon cacao powder
  • 1 dash vanilla essence
  • 10-20 grams fresh lemon juice
  • 1 Handful raw pistachios
  • 1 Handful raw walnuts

Recipe's preparation

    Truffles
  1. Grind almonds on speed 9 for 10 seconds. set aside

     

    add dates to bowl and chop on speed 9 for 10 seconds.

     

    add syrup to bowl and cook for 5 minutes, 37 degrees, speed 3.

     

    add almond flour, cacao, vanilla and lemon juice and mix on speed 8 for 10 seconds. Scrape down bowl and mix for a further 10 seconds.

     

    add walnuts and pistachios and mix for 8 seconds on speed 5.

     

    roll mixture into balls. Roll balls in desiccated coconut.

     

    Refrigerate.
