  • 875 g Milk
  • 500 g sugar
  • 1 --- egg
  • 4 --- egg yolks
  • 7 grams dried instant yeast
  • 406 gram plain flour
  • 5 gram salt
  • 100 gram unsalted butter
  • 2 level teaspoons vanilla
  • 3 level tbsp Corn Flour
  • 1/2 --- 1/2 cup water

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1 - Add custard ingredients to the bowl;
    625g milk, 100g sugar, 4 egg yolks, 2tsp vanilla, 3 tbsp corn flour.. turn on thickening mode.. watch the time when there is 4 mins left add 80g (2tbsp butter) to the bowl.. set custard aside in fridge with cling wrap to completely cool
    CLEAN AND DRY BOWL
    2. Add 250g milk, 50g sugar, 1 egg, 7g yeast, 406g flour, 5g salt to the bowl.. mix speed 3 for 10 seconds then leave it in the bowl to settle for 10mins... add 60g unsalted butter

    3 - turn on knead function for 8mins

    4- tip sticky dough out into oiled bowl and cover with tea towel until double in size

    5 - knock out the air, roll out dough to 1/4 inch thick and cut out circles and cover with tea towel, let them rise for another 15mins before frying on med/low heat

    6 - place rest of sugar and water to a saucepan and caramelise the toffee and let cool slightly

    7 - poke a little hole in the donuts and pipe in the cooled custard and dip into the toffee
