- 1 tablespoon Flaxseed, ground
- 2.5 tablespoons water, mineral
- 250 grams sweet potato, cubed
- 40 grams water, mineral
- 30 grams margarine, (or any dairy free butter)
- 165 grams coconut milk, (or any plant-based milk)
- 190 grams wholemeal flour
- 1 tablespoon baking powder
- 15 grams dessicated coconut
- 1 teaspoon ground cinnamon
- 1 pinch ground ginger
- Optional: any desired topping

TM 5Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
- 1. Mix ground flaxseed with water in a small ramekin and set aside for 5 mins to thicken and form a gel.
2. Preheat your waffle maker. Add sweet potato to TM bowl and chop 5 Sec/Speed 7. Scrape down sides with spatula.
3. Add water and cook 4 Min/Varoma/Speed 1.
4. Add butter to TM bowl and blend 10 Sec/Speed 7. Scrape down.
5. Add milk, flour, baking powder, dessicated coconut, cinnamon, ginger and flax egg and blend 10 Sec/Speed 4.
6. Grease your waffle maker with a little bit of margarine or oil, pour about 1/3 cup batter in and cook according to waffle maker instructions.
7. Optional: Serve with any desired topping such as maple syrup, chopped pecans, whipped coconut cream, blueberry sauce.
