White Christmas Ice Cream

Ingredients

Ice Cream

  • 150 g dried cranberries
  • 70 g Cointreau
  • 400 g Nestlé skim condensed milk
  • 850 g whipping cream
  • 1 tbsp Vanilla Paste
  • 50 g Shelled unsalted pistachios, roughly chopped
  • 50 g White Choc Chips, roughly chopped

Recipe's preparation

    Steps
  1. 1. In a small bowl add cranberries and cointreau to soak. Set aside. (Do 12hrs in advance if possible).

    2. Place condensed milk and vanilla paste into TM bowl and mix 40 sec/ speed 6. Set aside. Do not clean bowl.

    3. Add cream insert Butterfly and whip 30sec/ speed 4 or until soft peaks form.

    4. Remove butterfly and return condensed milk & vanilla to the bowl. Mix 3 sec/ speed 6.

    5. Add cranberries, pistachios & white chocolate and gently stir through with a spatula.

    6. Place in an Ice Cream container and freeze for min 6hrs.

    7. Allow to stand for approx 10 mins out of freezer before serving.

Tip

You could also add 100g dessicated coconut in step 5.
