      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Squeeze the lemons and collect the juice in a measuring cup. You are aiming for about 100 mL, but the recipe can easily be adjusted.
  2. Weigh 1.5 times the amount of sugar (compared to your lemon juice) into the TMX. Eg for 100mL juice, weigh 150g sugar. For 200mL juice, weigh 300g sugar...
  3. Add the same amount of water (compared to your lemon juice) into the TMX. Ie 100mL for 100mL.
  4. Bring to the boil (for 100mL water and 150g sugar, this takes somewhere between 3 and 4 minutes) and dissolve sugar: 4 min / 100°C / sp 2, measuring cup on.
  5. Add the lemon juice and mix 5 sec / sp 3.
  6. Fill into a sterilised glass bottle or jar (old glass juice or smoothie bottles work well).
  7. Keep in the fridge until use. Use like normal cordial, about 1/10 cordial in 9/10 water (or more/less, depending on taste).

Tip

Works well with ice cubes in summer or hot water as a tea in winter. Or with sparkling / soda water as a lemonade replacement.
Also tastes nice with ginger slices added when bringing the water and sugar to a boil. Just needs to be strained before bottling.
