Fettuccine Alfredo with Crab and Asparagus Tips

Ingredients

4 portion(s)

Alfredo Sauce

  • 200 grams Parmesan cheese, Cubed
  • 1 clove garlic, Crushed
  • 55 grams unsalted butter, Softened
  • 230 grams cream
  • 1-2 pinches Nutmeg, Optional
  • to taste salt
  • to taste pepper, Freshly ground
  • 20-30 asparagus tips, Optional
  • 227 grams Crab Claw Meat, Drain Well
  • 1/2 bunch parsley, Only use the leaves, optional, garnish

Fettuccini Noodles

  • 255 grams Fettuccine
  • 2 tablespoons olive oil
  • 1 litre water

Recipe's preparation

    Alfredo Sauce with Crab and Asparagus Tips
  1. Grate parmesan for 10 seconds on speed 9

    Remove from bowl and set aside

     

  2. Crush garlic and put in Thermomix bowl

    Add softened butter

    Puree for 15 seconds on speed 9

    Scrap down sides

    Cook for 5 minutes at 100 degrees speed 2

     

  3. Add cream to Thermomix bowl

    Add parmesan

    Add nutmeg

    Add salt and pepper, to taste

    Mix for 5 seconds on speed 8

    Cook for 8 minutes at 90 degrees, speed 4

     

    (See below, start cooking noodles now)

     

  4. Add asparagus tips to the Thermomix bowl

    Add crab meat

    Cook for 4-5 minutes in the Thermomix bowl at 90 degrees on reverse Counter-clockwise operation  soft speed Gentle stir setting

     

  5. Can substitute crab with chicken, pork or just omit

    Aspargus optional

     

  6. Fettuccine Noodles
  7. When you add the cream to the Thermomix bowl put water in a large pot and bring to a boil.

    Add olive oil to pot.

    Add fettuccine noddles to pot

    Cook according to directions

     

  8. When done, drain and rinse noodles with hot water

    Drain well after rinsing.

     

  9. Assembling Dish
  10. Put the noodles in a thermoserver and top with Alfredo Sauce with Asparagus and Crab. Garnish with parsley leaves (optional)

    I created this recipe and just tried it again and had some problems, all of my cheese melted and congealed on the bottom of the bowl. So, I am going to try it again and fix it
