Herbed Salmon Gratin with Zucchini and Carrot Ribbons

  • 1 tbspoilive oil, basil, fresh thyme
  • 1 clove garlic
  • 1 cup breadcrumbs
  • 3 small zucchini
  • 2 large peeled carrots

Recipe's preparation

  1. Chop together the breadcrumbs, herbs and garlic and put aside.

    Fill the Thermomix bowl  with 500g water.   Then lightly season the fish with salt and pepper and spread the breadcrumb mixture onto the salmon.

    Spray lightly with olive oil and cook for 15 minutes, varoma temp, speed 1.

    Meanwhile, using a swivel peeler, shave ribbons from the carrots and zucchini lengthways.

    When the salmon has cooked for 15 minutes, place the carrot ribbons into the Varoma and cook for 2 minutes, varoma temp, speed 1. Then add the zucchini and cook for a further 2-3 minutes.

    Mix the vegetable ribbons with lemon juice and salt and pepper and serve with the salmon.
