Mussels in wine sauce

  • 70 grams fresh tomato, or tin tomato

  • 1 pinch salt, or 1/2 tsp vegetable stock

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Put garlic, leek, tomato, carrot, salt and olive oil inside the mixing bowl and chop 4 seconds at speed 5. Scrape down sides of mixing bowl using the spatula.

    Sauté for 7 minutes/120 C/ Speed 1.

    Meantime place fresh mussels in the Varoma dish and set aside.

    Add wine and place the varoma dish on top of the mixing bowl lid. Cook for 15 minutes/ Varoma/ Speed 1.

    Transfer steamed mussels into a serving dish and cover with the wine sauce.

After steaming 1 kg of mussels you can pour half of the sauce over the steamed mussels and leave the other half to steam another kilo of fresh mussels using the existing sauce by programing another 15 minutes/ Varoma/Sp 1.
