Pepesan Ikan (grilled fish in banana leaves)

  • 500 grams fish
  • 3 Kaffir lime leaves
  • 1/2 teaspoon salt
  • 50 grams oilve oil
  • banana leaves

Spice Paste

  • 3 cloves garlic
  • 2 teaspoon palm sugar
  • 2 tomatoes
  • 2 tablespoon oil
  • 3 candlenuts
  • 1 Stalk LemonGrass
  • 1/4 teaspoon shrimp paste
  • 4 Large red chillies trimmed and de seeded
  • 2-3 small red chillies
  • 11/2 tablespoon galangal
  • 3 Red shallots
  • 1 tablespoon fresh ginger
  • 2 teaspoon Fresh Turmeric
  • 1 teaspoon tamarind pulp
  • 1 teaspoon coriander seeds
  • 1/4 teaspoon ground black pepper

Coconut Rice

  • 400 grams white rice
  • 500 gram water
  • 400 grams coconut milk
  • 1 lemongrass split and tied in knot

Recipe's preparation

  1.  Cut the fish into large chunks

    Shred the lime leaves by rolling the leaves into a tight cigarette an slicing finely.  Mix with the fish and set aside.

    Place all spice ingredients in TM bowl and mix for 30 seconds speed 8 until a smooth paste. Mix the blended spice paste, sea salt and oil thoroughly with the fish.  Cut banana leaves into 8cm x 8cm and place a salam leaf and two or three chunks of fish. Wrap the fish in banana leaf by rolling it over like a Christmas bon bon and secure with a tooth pick. You can use baking paper if you like and place on Varoma Tray.

    Coconut Rice

    Place water, coconut milk into TM bowl.Insert basket with rice and lemongrass.  Insert Varoma and cook for 16 minutes Varoma temperature speed 4 Remove basket with rice and set aside and continuing cooking fish until cooked. If you would like to make the Kangkung Pelecing you could add this now.  (recipe on community).
