RAW BROCCOLI SALAD TOSSED WITH SMOKED SALMON, BLACK OLIVES AND CREAMY AVOCADO DRESSING

Ingredients

Creamy Avocado Dressing

  • 1/2 ripe avocado
  • 1-2 cloves garlic
  • juice of 1 lemon
  • 1/4 cup of olive oil
  • 1/4 Cup of water
  • salt and pepper to taste

Broccoli Salad

  • 1 handful of fresh herbs
  • 1 head of broccoli, cut into florets sized to fit lid hole
  • 2 tomatoes, halved

to fold through salad

  • 200 grams Smoked Salmon, roughly chopped
  • 1 cup pitted black olives
  • 1/2 cup toasted mixed seeds

Recipe's preparation

    Dressing
  1. Add all ingredients into mixing bowl, blend 30seconds/speed 7.

    Remove from bowl and set aside.

  2. Salad
  3. Add herbs to mixing bowl, chop 3 seconds/speed4-5.

    Add broccoli and tomatoes, chop 3 seconds/speed 4-5.  Scraped down and repeat if necessary.

  4. Assemble Salad
  5. In a salad bowl fold dressing, olives, seeds and smoked salmon through the salad.  

    Serve immediately.

Tip

Could substitute tomatoe for red capsicum.

    I made this last night for a work pot luck where we each brought in a meal. I loved that it was so simple. The dressing really adds to the flavour. I had some frozen lemon juice and used 2 tbsps (always good to save lemon juice). I will make this again tmrc_emoticons.) Thanks

    Made this using lemon and coriander marinated chicken breast instead of salmon it was fab! I think some red onion would probably go well also. Very healthy and fresh salad that can be adapted easily for other options. Thank you for the recipe.

    I'll come back to add a rating when I've made it but I was thinking that chicken (shredded) would be a good sub for salmon too for people who don't like salmon (or who don't have it on hand)... I love smoked salmon though, and can't wait to make this!  Love

    Very, very good! I had it with a simpler dressings (oil, lemon juice and salt)... i keep a star for the next time I will try it with the avocado! JJJ!
