  • 60 grams water
  • 2 large eggs
  • 1 teaspoon sesame oil
  • 1 teaspoon fish sauce

  • 70 grams glutinous rice flour, or sweet rice flour
  • 50 grams cooked smoked white fish, like hoki or kahawai

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. chop the green spring onion pieces on speed 5 for 2 seconds, Add eggs, water, sesame oil and salt, mis speed 6 for 4 seconds. Add glutinous rice flour and mix 6 seconds on speed 5. Add flaked smoked fish, mix for 3 seconds reverseCounter-clockwise operation speed 2.

    Heat some oil in a crepe pan or small frying pan, when it is hot, pour in 1/3 of the mixture, cook until the edges are cooked and there are little bubbles in the surface. Flip and fry until cooked. Serve immediately with a nice Asian coleslaw OR cool and use to wrap that coleslaw and take in a lunch box.

Tip

The mixture needs to be as thick as a crepe batter, so you can still pour it, not as thick as a pikelet batter.

You could make these blini size and serve as an hors d'oeurve with some pickled cucumber on top.
